Valea Verde opened the doors for an authentic experience of Transylvania: active, immersive and responsible. The restored Saxon houses that guests live in are scattered through the village, fresh food and ingredients are grown in local households, every walk is an opportunity to talk to a villager, buy a homemade product, learn about his or her way of life.
This is how the social fabric, ecology, architecture, cuisine, natural beauty, and historical heritage are protected and grown. The apartments are fitted with en-suite bathrooms and traditional wood-burning stoves, which make for a cozy and romantic setting. The four Valea Verde apartments are for sociable gourmet guests, especially couples, who would like to stay close to the restaurant and easily access all of the facilities. All of the apartments are decorated in rural chic style, but each one has a different look and feel, as well as high-quality furnishings. Valea Verde Resort is the proud owners of four horses, who can be ridden in their dedicated riding arena or, by proficient equestrians, out in the glorious countryside. An experienced riding instructor will be on hand to teach beginners the basics and guide the more advanced along wonderful trails through the Transylvanian wilderness. As riding opportunities are subject to availability, please do make your reservation as early as possible to avoid disappointment.
On the majestic backdrop of the Carpathians, at the end of a road that winds through an ancient forest, the picturesque village of Cund, with its vividly painted houses, shines like a hidden jewel. Over the centuries, it soaked up German, Romanian and Hungarian traditions - and the result is a fascinating fusion of cultures, apparent in the architecture of the traditional houses or in the Saxon vibe of St. Nicholas Church.
If you like nature cruises, in spring, you will have wild daffodils and orchids for company; in summer, kestrels will be orbiting the piercing blue skies; in fall, you can go on truffle expeditions; and in winter, the snow-capped hills and mountains are perfect for adventure. The surroundings, about 100 kilometers from the village, are also rich in natural beauty and cultural highlights (fortified cities, folk museums, etc.).
Modern zest mixes with rustic flavors in a relaxed yet refined dining space. Housed in an old converted barn, it’s the perfect place to sit back and savor a luscious lunch or delicious dinner, after a day trekking in Transylvania. Drawing on his French culinary background, your host, Chef Jonas Schäfer - who runs the resort with his wife Ulrike - serves up local luxuries such as Transylvanian truffles, bringing a dash of Mediterranean mastery to rare regional ingredients.
With its embrace of slow food principles (a sustainable, local approach to gastronomy that seeks to preserve traditional and regional cuisine and respect for the local ecosystem), and holding the prestigious Blazon for Excellence in Service & Hospitality of the Chaîne des Rôtisseurs, the restaurant has attracted international attention, and won plaudits from food and wine critics from Austria, Germany, the UK and Scandinavia.
Away from the main dining area, guests seeking greater privacy and intimacy also have the option of the adjoining pavilion, which seats up to 12, while the lounge, with its stunning wilderness views, can host events for up to 90 attendees.
If the weather permits, why not dine al fresco? Valea Verde is delighted to arrange tables in their spacious grounds, by the lakeside. Or get truly back to nature with a wilderness lunch in a wonderful forest clearing or on a great ridge-line with amazing views of the Carpathian Mountains!
The restaurant serves a daily set menu of delicious local produce either as a three, five or seven-course menu. However, please feel free to approach Valea Verde Resort with any special requests, and they will do our best to spoil you!
The wine pairings include one glass of wine (100 milliliters) per course, water, coffee or tea after dinner and a drink from the bar.
The extensive Valea Verde cellar is there to provide the perfect liquid complement to your meal! Chef Jonas has turned to both local grapes – Feteasca Alba, Feteasca Regala, Feteasca Neagra, Sarba, Cramposie, Tamaioasa Romaneasca, Novac, Negru de Dragasani – and international vintages to ensure every wine lover is satisfied.
Each evening, he recommends a pairing based on the menu, featuring one of the best Romanian wines – but he’s equally happy to create a personalized pairing upon request, whether you crave a novel taste from an emerging wine region such as South Africa, or simply hanker for a trusty Bordeaux!
Valea Verde places a huge emphasis on growing as much of their own produce as they can. There are several plots scattered all over the valley in which they grow vegetables from organic local and international seeds. They were amazed to discover the wide variety of produce one could grow - apart from the traditional local varieties of tomatoes, eggplants, carrots, peppers, zucchini, pumpkins, cabbages, etc., they managed to grow artichokes, coriander, fennel, kale, Brussel sprouts, and many other delicious vegetables.
Their menu is very much dominated by the perfect ripeness of those vegetables, so rest assured that when you have a tomato starter in the restaurant you will experience an explosion of flavors as they pick the tomatoes from its vine just 30 minutes before serving them.
Valea Verde Resort gladly supports local production, from the delicious food they serve to their guests, to special drinks and traditional arts and crafts. The ingredients are carefully sourced from local farms, the truffle shavings come from the Cund forest and the jams are made after traditional recipes.
The time spent in Valea Verde will always be about slowing down, discovery and reconnection, but it may always feel too short. If you are a dreamer, you can go birdwatching in the ancient woods. If you are a seeker, you can go truffle hunting or hiking on the hills. If you are an adrenaline addict, you can choose horseback riding or discover new biking trails. If you are a gourmet traveler, feel free to take the Villa Vinéa tour or visit the artisan cheese makers. If you are passionate about traditions, take the arts and crafts tour and discover St. Nicholas Church in Cund. The Valea Verde Restaurant contains a wonderful selection of fascinating books on food and wine, as well as a wide range of titles on the history of Transylvania and Romania - both in English and in German. Furthermore, you will also find there a number of interesting British magazines (Condé Nast Traveller, Vogue, The Sunday Times Travel Magazine).
At the back of Valea Verde is a spacious area at your disposal with lounge chairs and various lovely spots in which to unwind - you are invited to make extensive use of it! Furthermore, guests are welcome to visit the lounge and pavilion, where you can relax and read a book in peace and quiet or enjoy a good chat!
Nestling behind Valea Verde is a swimming lake, in which all guests are welcome to take a bracing dip. As always, your safety is the number one priority, so please note that the resort does have certain rules. Guests use the lake at their own risk, and they cannot accept responsibility for any incidents. Under-18s must be supervised by parents or guardians at all times when using the lake.
Valea Verde Resort is privileged to have the most beautiful trails, woods, hills, and valleys right on their doorstep. This makes Valea Verde not only one of the best places to stay in Transylvania, but also the ideal base from which to get acquainted with the flora and fauna of this unique part of Europe, or even take a guided walk collecting herbs. Want to release your inner Robin Hood? Step into a special workshop next to the wood workshop, dedicated to the building of bows. Take your time to craft your bow over the course of a few days, or - if time doesn’t allow - use one the resort prepared earlier! You can also fashion your own arrows and then try out your creations! The resort has a small indoor shooting range above the workshop and one at the back of Valea Verde.
Please note that making your own bow and arrows requires prior reservation, but you’re welcome to practice archery in the Valea Verde garden at your leisure and... fire!
